Say hello to my new favourite post-workout snack. Quick, easy, tasty and full of protein, they’re great for chucking in my bag and nibbling on on my way to work. I’ve been a quinoa convert for quite a while, but only ever used it for savoury dishes. But now I can get my high protein hit and slow release energy AND satisfy my sweet tooth! Next time I’m going to experiment with different flavours; banana, grated apple, dried cranberries and maybe even dark chocolate chips when I’m feeling naughty!
What are your favourite healthy treats?
60g (uncooked) quinoa
2 tablespoons brown sugar
1 tablespoon ground cinnamon
2 tablespoons honey
1 teaspoon vanilla essence
Cook the quinoa according to the packet instructions, then mix the oats, sugar, cinnamon and quinoa in a bowl.
Beat the eggs with the honey and vanilla essence in a separate bowl. Then combine the two mixtures together.
Spread the mixture evenly in a greased baking tray (I used butter flavour Frylight to grease the tin) and bake for 15-20 minutes at 220.
